Beginner’s question about gears

Hi, my young daughter has just learned how to ride her bike, so I dusted down an old adult bike that somebody left in my garage with the intention of riding along with her. However, it’s a 21-speed bike and I’ve only ever ridden bikes with gears on the rear wheel, not the front. I know how gears work, i.e. how to shift up and down, but what I don’t get is how people shift from speed 7 (1 up front, 7 at rear) to 8 (2 up front, 1 at rear) without having to step back down through 6 gears to get there. It seems to me that by shifting up at the front I go immediately from 7 to 14, so then I have to step down all the way back to 8. And vice versa when stepping down from 8 to 7 (i.e. 8-1-2-3-4-5-6-7). And the same problem when shifting between 14 and 15. Am I missing something here, or is that how everyone does it? Thanks! Edit: Wow, just came back to this and found loads of replies, all of them excellent! It makes complete sense to me now, so thanks everyone for taking the time to reply to this (obvious beginner) question. 👍🏻

In my head, this is the perfect bike tour because the terrain is primarily flat, it's very beautiful, cities are relatively close together, and everything is very inexpensive. Am I missing anything? Is there just nowhere to safely ride when traveling between cities? My rough idea would be to ride from Minsk, to Vilnius, to Riga, to Tallinn, probably with some stops along the way (riding along the baltic coast, etc. etc.)

I had a fairly modest helmet as my first one, and I recently found out that the plastic components attached to the shell that do the job of fitting the helmet to your head has become so soft over time that a little bit of force caused it to just snap off. Now I'm left with a helmet that I'm pretty sure won't perform it's designed function as the shell kind of wobbles on my head no matter how I adjust the straps. This was after about 5 years, and I didn't use it for more than 100 days I'm sure. I'm looking to get something that costs more this time, under the assumption that it'll last longer, but if this is inevitable with plastic then I won't bother.
